Blanc de Noirs: The Art of Making White Wine from Black Grapes
Behind this somewhat mysterious expression lies a fascinating winemaking technique.
A Blanc de Noirs is a white wine produced from black-skinned grapes. For Eclipse, we chose to work exclusively with Merlot, one of Bordeaux’s most emblematic grape varieties.
The secret lies in the pressing process. The grapes are gently pressed, allowing the juice to remain in contact with the skins for only a very short time. As a result, the wine retains its pale colour while capturing the richness and character of the grape.
The outcome is an elegant and original wine that reveals an unexpected side of Merlot.
The Traditional Method: Finesse Through Time
Like the great sparkling wines made using the traditional method, Eclipse undergoes a second fermentation directly in the bottle.
This natural process creates fine, delicate bubbles while gradually developing greater aromatic complexity during ageing.
The wine gains depth and texture without losing its freshness and vibrancy.

In the glass, Eclipse displays a bright appearance with a delicate stream of elegant bubbles.
The nose opens with aromas of white fruits, fresh pear, peach and subtle citrus notes. On the palate, the wine is lively, balanced and driven by a refreshing acidity that immediately invites another sip.
