Apr\u00e8s un \u00e9grappage et un foulage doux, les raisins sont transf\u00e9r\u00e9s en cuves inox thermor\u00e9gul\u00e9es, avec une cuvaison de 15 \u00e0 21 jours selon les c\u00e9pages et les lots de vendanges.<\/p>\n<p>L&#039;\u00e9levage se d\u00e9roule en barriques pendant 12 mois, chaque c\u00e9page \u00e9tant \u00e9lev\u00e9 s\u00e9par\u00e9ment. Notamment, 30% des barriques sont renouvel\u00e9es chaque ann\u00e9e.
