From the first grapes to the first vat, after the magic of the alcoholic and malo-lactic fermentations, grape juice gradually becomes must and then wine.

As the process reaches completion, the critical, essential moment of choosing the vats arrives, in order to know which vat containing such and such a part of the crop will or won’t form part of the grand vin.
With a skilful calculation of percentages between different grape varieties corresponding to a well-defined plot of vines, agreement is reached, between the cellar master, the adviser and the estate manager, in order to deliver a cuvee that will be the vintage of the year.

This is the art of blending.
